We recently learned that the wee one is allergic to milk and eggs, so I've cut those things out of my diet. I'm pretty fond of baking and eating delicious things, so I'm looking for things that I can enjoy without triggering Nora's allergies.

Next we tried vegan chocolate chip cookies, which did not turn out great. They tasted OK, but were flat and the texture was off. After refrigerating the dough, the next pans full of cookies were better, but I'm still looking for a different cookie recipe. Let me know if you have recommendations.

Melissa, have you seen the blog Have Cake, Will Travel (http://havecakewilltravel.com/recipelist/)? I've had good luck with the baked goods there when I've needed to bake something vegan.
I've been told that flax meal works great as an egg substitute in baked goods. I use flax in a lot of things, but haven't tried it in this way. If you do, let me know how it goes. Bridgette

We've experimented with a lot of vegan baking recipes. For eggs: I have not tried the Ener-G Replacer but some people like it. We like applesauce, sweet potatoes or even silken tofu. For butter: We love Earth Balance and even put it on our popcorn. I would never know the difference. Finally for milks, our favorites are almond and coconut milk. The whole coconut milk is really thick and could with thickness of the dough. Coconut oil is really great for making frosting too.
Food allergies and sensitivities are always a whole new adventure. We have some favorite blogs we like to refer to for substitutes in recipes. Fortunately milk and egg replacers have better results than wheat replacements. Good luck and have fun!
